This might sound like a silly question but I need some clarity on the subject: when we go over on a tourist visa, do we use international drivers licenses obtained in SA or can we immediately have our licenses converted to Kiwi (remember we're on tourist visas still)?

You can drive with your SA license for a year, before you have to convert to a NZ license!  O0
No need to get an international license.
